GRILLED EGGPLANT!

This tasty marinade can also be used with other veggies such as zucchini and mushrooms!

Make sure you have an adult help while making this.

Ingredients:
1⁄4 cup olive oil
1⁄4 cup balsamic vinegar
1 Tbsp water
1 clove garlic
1 tsp. oregano (dried)
1⁄2 tsp. salt
1⁄2 tsp. pepper
1 medium sized eggplant

Tools:
Garlic press
Large bowl
Spoon

What to do:

  1. Mince the garlic clove.
  2. Combine all ingredients except the eggplant in a large bowl.
  3. Peel and slice the eggplant into 1⁄2 inch squares.
  4. Soak the eggplant in the marinade for one hour.
  5. Preheat the broiler.
  6. Broil eggplant for about 5 minutes on each side until they are hot and soft.
