This tasty marinade can also be used with other veggies
such as zucchini and mushrooms!

Ingredients:
1⁄4 cup olive oil
1⁄4 cup balsamic vinegar
1 Tbsp water
1 clove garlic
1 tsp. oregano (dried)
1⁄2 tsp. salt
1⁄2 tsp. pepper
1 medium sized eggplant
Tools:

Large bowl

What to do:
- Mince the garlic clove.
- Combine all ingredients except the eggplant in
a large bowl.
- Peel and slice the eggplant into 1⁄2 inch
squares.
- Soak the eggplant in the marinade for one hour.
- Preheat the broiler.
- Broil eggplant for about 5 minutes on each side
until they are hot and soft.
